Wild Mushroom and Truffle Risotto
Imagine a creamy, luxurious risotto that captures the essence of an autumn forest. This wild mushroom and truffle risotto is my go-to for a cozy dinner party. The earthy aroma of porcini and cremini mushrooms mingles with the delicate scent of truffle oil, while a splash of white wine adds a bright note. Each grain of Arborio rice is lovingly stirred to release its starches, creating a velvety texture that clings to your spoon. Finished with a generous handful of Parmigiano-Reggiano and a drizzle of truffle oil, this dish is pure comfort. Serve it with a glass of crisp white wine and let the flavors transport you to the Italian countryside.

Soak dried porcini in 250ml warm water for 15 minutes. Strain, reserving liquid, and chop porcini. Slice cremini mushrooms. Finely chop onion and garlic. Grate Parmigiano.

In a saucepan, bring vegetable broth to a simmer. Keep hot over low heat.
