Directions

  1. 1

Step 1: In a large mixing bowl, combine the drained and rinsed chickpeas and kidney beans. Use a fork to gently mash about 1/4 of the beans — this helps the salad hold together and creates a creamier texture.

  2. 2

Step 2: Add the diced cucumber, halved cherry tomatoes, diced red bell pepper, finely chopped red onion, halved Kalamata olives, and fresh parsley to the bowl. Toss gently to distribute evenly.

  3. 3

Step 3: In a small jar or bowl, whisk together the extra-virgin olive oil, fresh lemon juice, red wine vinegar, minced garlic, dried oregano, and a pinch of salt and pepper. Shake or whisk until emulsified.

  4. 4

Step 4: Pour the dressing over the bean and vegetable mixture. Stir well to coat every ingredient. Taste and adjust salt, pepper, or lemon juice as needed.

  5. 5

Step 5: Transfer the salad to an airtight container and refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve cold or at room temperature. Store leftovers in the fridge for up to 5 days — the flavor only gets better!

  6. 6

Step 6: For meal prep, divide into individual containers with a squeeze of lemon on top. Add a pinch of red pepper flakes for heat if desired.
