The Laziest Creamy Pasta That Somehow Tastes Gourmet

I made this the night I came home at 9pm, had nothing in the fridge, and genuinely considered ordering pizza again. Twenty minutes later I was eating something that tasted like it came from an Italian trattoria. The secret is letting the pasta water do the work — starchy, salty, magical. I've made this at least 40 times now and it never gets old.

Directions

  1. 1

Cook pasta in heavily salted boiling water. Before draining, scoop out 200ml of starchy pasta water.

  2. 2

In a large pan, melt butter over medium heat. Smash and mince garlic, cook 1 minute until fragrant.

  3. 3

Add cream, stir. Add 100ml pasta water. Let simmer 2 minutes.

  4. 4

Add drained pasta directly to the pan. Toss vigorously.

  5. 5

Remove from heat. Add Parmesan gradually, tossing constantly. Add more pasta water if needed — sauce should coat every strand.

  6. 6

Crack plenty of black pepper over the top. Garnish with parsley. Serve immediately.
