Spicy Lamb and Lentil Manti with Garlic Yogurt

This is my love letter to Turkish manti, but with a rustic, soulful twist inspired by the hearty lentil soups of Anatolia. The filling is fragrant with cumin and smoked paprika, while the tender pasta sheets are brushed with olive oil and baked until golden-edged. You'll feel the warmth of a Turkish home kitchen as you fold each little dumpling, and the joy of that first bite—crispy, creamy, tangy, and deeply satisfying. It's comfort food that tells a story.

Ingredients

  • all-purpose flour300g
  • egg1 large
  • water120ml
  • salt1 tsp
  • lamb mince250g
  • red lentils, cooked150g
  • onion, finely chopped1 small
  • garlic cloves, minced2
  • ground cumin1 tsp
  • smoked paprika1 tsp
  • black pepper0.5 tsp

  • plain yogurt400g
  • garlic clove, crushed for yogurt1

Directions

    In a large bowl, mix flour, salt, and egg. Gradually add water to form a stiff dough. Knead for 10 minutes until smooth, cover with a damp cloth, and rest for 30 minutes.

    In a skillet over medium heat, brown the lamb mince, breaking it apart. Add onion and garlic, cook until soft. Stir in cooked lentils, cumin, smoked paprika, and black pepper. Cook for 5 minutes, then set aside to cool.

    Roll the dough into a thin sheet (about 2mm thick). Cut into 2cm squares. Place a small amount of filling on each square, fold into triangles, and pinch edges to seal. Arrange on a floured tray.

    Preheat oven to 180°C (350°F). Grease a baking dish with olive oil, place the manti in a single layer, and brush with remaining olive oil. Bake for 20-25 minutes until golden and crisp.

    In a bowl, mix yogurt with crushed garlic and a pinch of salt. Melt butter in a small pan, add Aleppo pepper and dried mint, sizzle for 30 seconds.

    To serve, spread garlic yogurt on plates, top with baked manti, and drizzle with the spiced butter. Enjoy warm.
