  • water100ml
  • minced lamb500g
  • onion (grated)1 medium

  • sweet paprika1 tsp

  • plain full-fat yogurt200ml

Directions

    Place the fine bulgur in a small bowl, pour the boiling water over it, cover, and let it soak for 10 minutes until the water is absorbed and the bulgur is tender.

    In a large bowl, combine the soaked bulgur, minced lamb, grated onion (squeeze out excess liquid first), minced garlic, cumin, paprika, cinnamon, salt, and pepper. Mix well with your hands for about 2 minutes until the mixture is sticky and cohesive.

    Divide the mixture into 8 equal portions. Shape each portion around a flat metal skewer into a long, finger-shaped kebab, about 10cm long. Refrigerate the skewers for 20 minutes to firm up.

    While the kebabs chill, prepare the mint yogurt sauce: whisk together the yogurt, chopped mint, lemon juice, and a pinch of salt. Set aside.

    Brush the chilled kebabs lightly with olive oil. Grill over medium-high heat (or in a hot cast-iron pan) for 8–10 minutes, turning occasionally, until nicely charred and cooked through.
