Soba Noodle In Kombu Dashi With Teriyaki Salmon
This elegant dish pairs tender teriyaki-glazed salmon with chewy soba noodles in a fragrant kombu dashi broth, finished with a sprinkle of goji berries for a subtle sweet-tart contrast. The salmon’s glossy glaze—balanced between smoky teriyaki and delicate umami—complements the broth’s clean, oceanic depth, while the soba’s firm bite holds its own against the silky sauce. A study in precision and restraint, it transforms humble pantry staples into a bowl of refined comfort, where every element sings in harmony. Worth the effort for its balance of textures and layered flavors alone.

Directions
- 1
Combine sake, soya sauce, mirin, and sugar in a small bowl to make the teriyaki marinade.
- 2
Place the salmon filet in a shallow dish, pour the marinade over it, and let it marinate for 15 minutes at room temperature.
- 3
While the salmon marinates, prepare the kombu dashi: wipe the kombu with a damp cloth, place it in a pot with 500 ml water, and heat over medium heat. Just before the water boils, remove the kombu and set the dashi aside.
- 4
Cook the soba noodles according to package instructions, then drain and rinse under cold water. Set aside.
- 5
Heat vegetable oil in a non-stick skillet over medium-high heat. Remove salmon from the marinade (reserve the marinade) and sear for 3-4 minutes per side until cooked through and caramelized.
- 6
Pour the reserved marinade into the skillet and let it simmer with the salmon for 1 minute, turning to coat.
- 7
Reheat the kombu dashi in a pot, then divide it between two bowls. Add the cooked soba noodles and top with the teriyaki salmon.
- 8
Garnish with goji berries and sesame seeds before serving.
