Preheat oven to 300°F (150°C). In a small bowl, mix smoked paprika, garlic powder, onion powder, dry mustard, cayenne, salt, and black pepper. Rub the spice mixture all over the pork shoulder.

Heat olive oil in a large Dutch oven over medium-high heat. Sear the pork on all sides until deeply browned, about 3-4 minutes per side. Add apple cider vinegar and chicken broth, scraping up any browned bits. Bring to a simmer, cover, and transfer to the oven. Braise for 2 to 2.5 hours, until the pork is fork-tender and shreds easily.

Remove pork from the oven and let it rest. When cool enough to handle, shred the meat with two forks. Strain the braising liquid, skim off fat, and set aside. Mix maple syrup and bourbon (if using) into the reserved liquid. Toss the shredded pork with about 1/2 cup of this glaze, reserving the rest for later.
