- chicken broth500ml
- sharp cheddar cheese, grated150g

Remove the membrane from the back of the ribs (slide a knife under it and pull it off with a paper towel). Pat ribs dry. Mix brown sugar, paprika, garlic powder, onion powder, cayenne, salt, and black pepper. Rub all over the ribs, cover, and refrigerate for at least 1 hour (or overnight).

Preheat oven to 150°C. Place ribs on a baking sheet, cover tightly with foil, and bake for 2.5 to 3 hours, until tender but not falling apart.

Meanwhile, make the glaze: in a small saucepan, combine maple syrup, bourbon, vinegar, ketchup, and Worcestershire. Simmer over medium heat, stirring occasionally, until thickened (about 10–15 minutes). Set aside half for serving.

When ribs are done, increase oven temperature to 200°C. Brush ribs generously with the glaze. Return to oven, uncovered, for 15–20 minutes, basting once, until lacquered and slightly charred at the edges.

While ribs are finishing, prepare the grits: bring chicken broth and 250ml water to a boil in a large pot. Slowly whisk in grits, reduce heat to low, and simmer, stirring frequently, for 20–25 minutes until creamy and tender. Stir in butter and cheddar until melted; season with salt and pepper.
