Smoky Maple-Bourbon Glazed Ribs
There's something magical about the way smoky, sticky ribs can turn a backyard gathering into a feast. This recipe is my go-to for summer weekends—tender pork ribs slow-cooked to fall-off-the-bone perfection, then slathered with a sweet and boozy maple-bourbon glaze that caramelizes beautifully on the grill. The rub has a hint of coffee and smoked paprika, adding depth without overpowering. You'll love the balance of sweet, savory, and smoky flavors, and the aroma will have everyone hovering around the grill. Serve with classic sides like coleslaw and cornbread, and get ready for sticky fingers and happy faces.
Ingredients
- pork baby back ribs1.5 kg
- brown sugar2 tbsp
- smoked paprika1 tbsp
- fine sea salt1 tbsp
- black pepper1 tsp
- garlic powder1 tsp
- onion powder1 tsp
- ground coffee1 tsp
- cayenne pepper1/2 tsp
- maple syrup120 ml
- bourbon60 ml
- apple cider vinegar2 tbsp
- Worcestershire sauce1 tbsp
- tomato paste1 tbsp
Directions
- 1
Preheat oven to 150°C (300°F). In a small bowl, mix brown sugar, smoked paprika, salt, pepper, garlic powder, onion powder, coffee, and cayenne. Pat ribs dry and rub the spice mixture all over.
- 2
Place ribs on a rack in a roasting pan, meat side up. Add 1 cup water to the pan, cover tightly with foil, and bake for 2.5 hours until tender.
- 3
Meanwhile, make the glaze: in a saucepan, combine maple syrup, bourbon, vinegar, Worcestershire, and tomato paste. Simmer over medium heat for 5-7 minutes until slightly thickened.
- 4
Remove ribs from oven and brush generously with glaze. Preheat grill to medium-high.
- 5
Grill ribs for 5-7 minutes per side, brushing with more glaze, until caramelized and charred in spots. Watch closely to avoid burning.
- 6
Let rest for 10 minutes, then slice between bones and serve with remaining glaze.
