Seafood and Saffron Rice with Smoky Paprika Aioli
Imagine the sun-drenched coast of Valencia, where the air smells of sea salt and saffron. This dish is my love letter to that golden hour, a rustic yet elegant one-pan meal that brings together tender shrimp, briny mussels, and creamy bomba rice infused with threads of real saffron. The star, you'll discover, is the smoky paprika aioli—a garlicky, fiery dip that cuts through the richness and makes every bite sing. You'll feel the warmth of a Spanish summer as you watch the rice drink up the broth, turning into a velvety, almost risotto-like treasure. It's a meal you'll want to share with friends, laughter, and a glass of cold Albariño.

Directions
- 1
First, make the paprika aioli: In a mortar, pound the garlic clove with a pinch of salt until creamy. Whisk in the egg yolk, lemon juice, and smoked paprika. Slowly drizzle in the olive oil while whisking constantly until thick and emulsified. Set aside.
- 2
In a large paella pan or wide skillet over medium heat, warm a generous glug of olive oil. Sauté the onion and red pepper strips until soft, about 8 minutes. Add the garlic, paprika, and saffron, stirring for 1 minute until fragrant.
- 3
Pour in the grated tomatoes, letting them cook down for 5 minutes until the mixture thickens and darkens. Then add the rice, stirring to coat every grain in the rich, brick-red oil.
- 4
Deglaze with the white wine, letting it bubble away for a minute. Pour in the hot fish stock all at once, season with salt, and resist the urge to stir from this point on—this is crucial for the coveted crunchy bottom crust called socarrat.
- 5
After 15 minutes of gentle simmering, tuck the shrimp and mussels into the rice, hinge-side down. Cook uncovered for another 12–15 minutes until the rice is tender, the mussels have opened, and a delicate golden crust forms on the bottom. Remove from heat, cover with a clean kitchen towel, and rest for 5 minutes.
- 6
Squeeze fresh lemon over the top, scatter parsley, and serve straight from the pan with a generous dollop of smoky aioli on every plate.
