Rock Cakes

Title: Rock Cakes Ingredients: Self-raising Flour, Caster Sugar, Baking Powder, Butter, Dried Fruit, Eggs, Milk, Vanilla Extract Instructions: 1. Preheat your oven to 180C/350F/Gas 4 and line a baking tray with baking parchment. 2. In a bowl, mix the flour, sugar, and baking powder. Then rub in the cubed butter until the mixture looks like breadcrumbs. Stir in the dried fruit. 3. In a separate clean bowl, beat the egg and milk together with the vanilla extract. 4. Combine the wet and dry mixtures until just combined. 5. Spoon the mixture onto the baking tray and bake for 15-20 minutes until golden brown. 6. Let them cool slightly before enjoying with a cup of tea. Anecdote: One time, I accidentally used salt instead of sugar in my rock cakes. Let's just say they were truly "rock-hard" and not in a good way! Unique tip: For extra moisture, try soaking your dried fruit in some rum or orange juice before adding them to the mixture. It adds a delicious twist to the traditional recipe. So there you have it, rock on with these deliciously rugged rock cakes!

Directions

  1. 1

Preheat oven to 180C/350F/Gas 4 and line a baking tray with baking parchment.

  2. 2

Mix the flour, sugar and baking powder in a bowl and rub in the cubed butter until the mixture looks like breadcrumbs, then mix in the dried fruit.

  3. 3

In a clean bowl, beat the egg and milk together with the vanilla extract.

  4. 4

Add the egg mixture to the dry ingredients and stir with a spoon until the mixture just comes together as a thick, lumpy dough. Add a teaspoon more milk if you really need it to make the mixture stick together.

  5. 5

Place golfball-sized spoons of the mixture onto the prepared baking tray. Leave space between them as they will flatten and spread out to double their size during baking.

  6. 6

Bake for 15-20 minutes, until golden-brown. Remove from the oven, allow to cool for a couple of minutes then turn them out onto a wire rack to cool.
