Polskie Nalesniki (Polish Pancakes)
Polskie Nalesniki are delicate, paper-thin Polish pancakes that strike the perfect balance between tender and lightly crisp. Their subtle sweetness pairs beautifully with rich fillings, whether it’s a dusting of powdered sugar and fresh berries or a savory combination of mushrooms and cheese. The batter’s simplicity—just flour, eggs, milk, and a touch of sugar—lets the natural flavors shine, while resting it briefly ensures a smooth, lump-free texture. Versatile enough for breakfast, brunch, or dessert, these pancakes are a comforting staple worth mastering.

Directions
- 1
Add flour, eggs, milk, water, and salt in a large bowl then mix with a hand mixer until you have a smooth, lump-free batter.
- 2
At this point, mix in the butter or the vegetable oil. Alternatively, you can use them to grease the pan before frying each pancake.
- 3
Heat a non-stick pan over medium heat, then pour in the batter, swirling the pan to help it spread.
- 4
When the pancake starts pulling away a bit from the sides, and the top is no longer wet, flip it and cook shortly on the other side as well.
- 5
Transfer to a plate. Cook the remaining batter until all used up.
- 6
Serve warm, with the filling of your choice.
