- whole chicken, butterflied1.5 kg
- garlic cloves, minced4 cloves
- ají amarillo paste3 tbsp
- soy sauce2 tbsp
- white vinegar2 tbsp
- ground cumin1 tsp
- dried oregano1 tsp
- smoked paprika1 tsp
- olive oil3 tbsp
- salt and black pepperto taste
- yuca (cassava), peeled and cut into fries500g
- vegetable oil for frying500ml
- lime wedges, for serving2

In a small bowl, mix the minced garlic, 2 tablespoons of ají amarillo paste, soy sauce, vinegar, cumin, oregano, smoked paprika, 2 tablespoons of olive oil, and a good pinch of salt and pepper. Rub this marinade all over the butterflied chicken, making sure to get under the skin where possible. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.

Preheat your oven to 200°C (400°F). Place the marinated chicken on a rack over a baking tray, skin side up. Roast for about 45-55 minutes, basting occasionally with any pan juices, until the internal temperature reaches 74°C (165°F) and the skin is golden and crisp.

While the chicken roasts, prepare the glaze: in a small saucepan, combine the remaining 1 tablespoon of ají amarillo paste with 1 tablespoon of olive oil and 2 tablespoons of water. Heat gently for 5 minutes, stirring, until it thickens slightly. Set aside.

In the last 10 minutes of cooking, brush the glaze generously over the chicken, then return to the oven to let it caramelize and become sticky.

For the yuca fries: heat the vegetable oil in a deep pot to 180°C (350°F). Fry the yuca in batches for about 5-7 minutes, until golden and crispy. Remove with a slotted spoon, drain on paper towels, and season with salt.
