Pate Chinois

Alright, folks, let's talk about Pate Chinois! A delicious mix of potatoes, minced beef, and creamed corn that will warm your soul. Now, here's a little story for you: one time, I accidentally used sugar instead of salt in my mashed potatoes. Let's just say it was not a flavor combination anyone enjoyed! Pro tip: Want to add a little kick to your Pate Chinois? Try sprinkling some cayenne pepper into the minced beef for a spicy twist! So, start by cooking those potatoes until they're nice and tender. And don't forget to add a generous amount of butter for that creamy goodness. Oh, and when you're mashing those potatoes, don't be afraid to leave them a bit chunky for some extra texture. Once your Pate Chinois is assembled and ready to bake, pop it in the oven and get ready for a cozy, comforting meal that will have everyone coming back for seconds. Enjoy!

  1. 1

In a large pot of salted water, cook the potatoes until they are very tender. Drain.

With a masher, coarsely crush the potatoes with at least 30 ml (2 tablespoons) of butter. With an electric mixer, purée with the milk. Season with salt and pepper. Set aside.

  3. 3

With the rack in the middle position, preheat the oven to 190 °C (375 °F).

  4. 4

In a large skillet, brown the onion in the remaining butter. Add the meat and cook until golden brown. Season with salt and pepper. Remove from the heat.

  5. 5

Lightly press the meat at the bottom of a 20-cm (8-inch) square baking dish. Cover with the corn and the mashed potatoes. Sprinkle with paprika and parsley.

  6. 6

Bake for about 30 minutes. Finish cooking under the broiler. Let cool for 10 minutes.
