- saffron threads, crushed and soaked in 2 tbsp warm watera pinch

- ground almonds50g
- whole almonds, toasted60g
- fresh cilantro, choppeda handful

In a large bowl, combine the lamb cubes with 1 tsp each of cumin and ginger, plus a pinch of cinnamon, salt, and pepper. Let it marinate for at least 30 minutes (or overnight for deeper flavor).

Heat olive oil in a heavy-bottomed tagine or Dutch oven over medium-high heat. Brown the lamb in batches, about 3 minutes per side, and set aside. Do not overcrowd.

Reduce heat to medium. Add the chopped onions and cook until softened, about 5 minutes. Stir in garlic, then the remaining cumin, ginger, cinnamon, turmeric, and saffron with its soaking water. Cook for another minute until fragrant.

Return the lamb to the pot. Pour in 600ml of water (or enough to almost cover the meat). Bring to a simmer, then cover and cook on the lowest heat for 1.5 hours, stirring occasionally, until the lamb is fork-tender.

Stir in the dried apricots, honey, and ground almonds. Continue to cook uncovered for 20-30 minutes, allowing the sauce to thicken slightly. Taste and adjust seasoning.
