Miso Soup With Thin Noodles

Miso soup with delicate rice noodles is a deeply comforting vegan dish, its savory broth enriched with earthy miso and brightened by fresh ginger, spinach, and tender tofu. Thin shiitake mushrooms add a meaty chew, while baby carrots and parsnip lend subtle sweetness, all tied together with a final sprinkle of chives for freshness. The key lies in whisking the miso paste into hot water first, ensuring a silky, lump-free texture that makes every spoonful satisfying. Worth the care, this bowl delivers warmth and nourishment in every bite.
