Miso-Glazed Salmon with Soba Noodles

Ingredients

  • salmon fillets4 × 150g
  • white miso paste3 tbsp
  • mirin2 tbsp
  • sake2 tbsp
  • soy sauce1 tbsp
  • brown sugar1 tbsp
  • fresh ginger1 tsp, grated
  • garlic1 clove, minced
  • soba noodles200g
  • bok choy2 heads, separated
  • sesame oil1 tbsp
  • scallions2, thinly sliced
  • sesame seeds1 tbsp, toasted

Directions

    In a small bowl, whisk together miso, mirin, sake, soy sauce, brown sugar, ginger, and garlic until smooth. Place salmon fillets in a shallow dish, pour marinade over, and let sit for 15 minutes (or up to 2 hours in the fridge).

    While salmon marinates, cook soba noodles according to package instructions. Drain, rinse under cold water to stop cooking, and set aside.

    Heat sesame oil in a large skillet over medium-high heat. Remove salmon from marinade (reserve marinade) and sear skin-side down for 3-4 minutes until crisp. Flip and cook for 2-3 minutes more. Transfer salmon to a plate.

    In the same skillet, add bok choy and cook for 2 minutes until slightly wilted. Pour in reserved marinade and bring to a simmer. Add cooked soba noodles and toss to coat, cooking for 1-2 minutes until heated through.

    To serve, divide soba and bok choy among plates. Top with salmon fillet, spoon over any pan sauce, and garnish with scallions and sesame seeds.
