Rinse the red lentils thoroughly under cold water until the water runs clear. Set aside to drain.

In a heavy-bottomed pot, heat the oil over medium heat. Add the chopped onions and sauté until soft and golden, about 8 minutes. Stir in the garlic, ginger, and berbere; cook for another 2 minutes until fragrant.

Add the tomato paste and stir well, letting it caramelize slightly for 1 minute. Pour in the vegetable broth (or water) and bring to a gentle simmer.

Add the rinsed lentils and salt. Cover and simmer on low heat for about 30-40 minutes, stirring occasionally, until the lentils are tender and the stew thickens to a creamy consistency. If it gets too thick, add a splash of water.

While the stew cooks, prepare the injera: whisk teff flour with water (and baking soda, if using) to form a thin, slightly bubbly batter. Let it rest for 10 minutes.
