Lebanese Lentil Soup

Lebanese Lentil Soup is a deeply comforting dish where tender lentils and fluffy rice swim in a fragrant broth perfumed with coriander, garlic, and a bright squeeze of lemon. The ham bone lends a subtle, savory depth that’s balanced by the spinach’s fresh finish, creating layers of earthy, citrusy richness in every spoonful. It’s a simple yet soul-warming bowl that’s as nourishing as it is flavorful, ideal for cozy evenings or any day you crave a taste of Lebanon.

Directions

  1. 1

Rinse the lentils and rice separately under cold water. Drain and set aside.

  2. 2

In a large pot, heat a splash of oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

  3. 3

Crush the garlic cloves and add to the pot with the coriander seeds. Cook for 1 minute until fragrant.

  4. 4

Add the ham bone, lentils, rice, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.

  5. 5

Stir in the spinach and cook for an additional 10 minutes until wilted.

  6. 6

Remove the ham bone. Shred any meat from the bone and return it to the soup.

  7. 7

Season with salt and pepper. Stir in the lemon juice and adjust seasoning to taste.

  8. 8

Serve hot, optionally with a drizzle of olive oil and a squeeze of lemon.
