Ingredients

  • water500ml
  • soy sauce80ml
  • mirin2 tbsp
  • brown sugar2 tbsp
  • garlic cloves, crushed4
  • fresh ginger, sliced15g
  • whole black peppercorns1 tsp
  • green onions, chopped3
  • kimchi, roughly chopped200g
  • ssamjang (Korean dipping sauce)4 tbsp
  • lettuce leaves (red leaf or romaine)12 large
  • perilla leaves (or additional lettuce)12
  • steamed short-grain rice2 cups
  • toasted sesame oil1 tbsp

Directions

    Place the pork belly in a medium pot and cover with the 500ml of water. Add soy sauce, mirin, brown sugar, garlic, ginger, and peppercorns. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes until the meat is very tender but still holds its shape.

    Remove the pork from the braising liquid and let it rest for 5 minutes. Slice the belly into bite-sized strips, about 1 cm thick. Reserve the braising liquid—you can drizzle a little over the rice later.

    In a small bowl, mix the ssamjang with a tiny splash of rice vinegar if you like (optional). Arrange the lettuce and perilla leaves on a large platter.

    To serve, place the sliced pork, chopped kimchi, ssamjang, steamed rice, and toasted sesame oil on the table. Provide each diner with a small bowl of warm rice.
