Directions

  1. 1

Cook the pasta shells in a large pot of salted boiling water until al dente, about 10 minutes. Reserve 1 cup of pasta water, then drain.

  2. 2

While the pasta cooks, thinly slice the chillies and bell pepper, and mince the garlic.

  3. 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced chillies and bell pepper, and sauté for 3-4 minutes until softened.

  4. 4

Add the minced garlic and cook for 1 minute until fragrant.

  5. 5

Add the drained tuna to the skillet, breaking it into flakes with a spoon. Cook for 2 minutes, stirring occasionally.

  6. 6

Add the cooked pasta to the skillet along with the lemon juice and a splash of reserved pasta water. Toss to combine, adding more pasta water if needed to create a light sauce.

  7. 7

Season with ground pepper to taste, and stir in the chopped parsley leaves.

  8. 8

Serve immediately, garnished with extra parsley if desired.
