400g Chickpeas
400ml Coconut milk
1 large, chopped Onion
3 cloves, minced Garlic
1 inch, grated Ginger
2 tbsp Curry powder
2 medium, chopped Tomatoes
200g Spinach
2 tbsp Olive oil
to taste Salt
to taste Pepper
for garnish Fresh cilantro
Instructions

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent.

Stir in the minced garlic and grated ginger, cooking for another minute. Then add the curry powder and chopped tomatoes, cooking until the tomatoes soften.

Add the chickpeas and coconut milk to the pot, stirring well. Bring to a simmer and let cook for about 15 minutes. Finally, stir in the spinach and cook until wilted. Season with salt and pepper, and garnish with fresh cilantro before serving.
