High-Protein Greek Bowl That Actually Keeps You Full All Day

I started making this when I was obsessed with hitting 40g of protein at lunch without touching a protein shake. The first time I tasted the lemon-herb chicken over creamy tzatziki and warm rice, I literally texted three friends the recipe. It's the kind of bowl that makes you feel like you're eating at a fancy spot — except you made it in 25 minutes in your pajamas.

Directions

  1. 1

Slice chicken breast into thin strips. Season with garlic powder, oregano, salt, pepper, and 1 tbsp olive oil.

  2. 2

Heat a skillet over high heat. Cook chicken 3-4 min per side until golden and cooked through. Set aside.

  3. 3

Make quick tzatziki: mix Greek yogurt, diced cucumber, 1 tbsp lemon juice, pinch of salt and a drizzle of olive oil.

  4. 4

Slice cherry tomatoes in half. Crumble feta.

  5. 5

Build your bowl: rice base, chicken strips, tomatoes, olives, a big spoonful of tzatziki, and feta on top.

  6. 6

Drizzle remaining lemon juice over everything. Serve immediately.
