High-Protein Egg Fried Rice That Beats Takeout Every Time (30g Protein, $3 Total)

I've been chasing the perfect egg fried rice for years. The secret isn't the sauce — it's using DAY-OLD rice and a scorching hot pan. Add extra eggs and edamame for protein and suddenly a $3 pantry meal has 30g of protein and tastes like the best fried rice you've ever had. I will never order this dish from a restaurant again.

Directions

  1. 1

Critical: rice must be cold and at least 1 day old. Break up any clumps.

  2. 2

Beat eggs with a pinch of salt.

  3. 3

Heat wok or large skillet over MAXIMUM heat until smoking. Add oil.

  4. 4

Add garlic, stir 15 seconds. Add carrots, stir-fry 2 min.

  5. 5

Push everything to the side. Pour eggs into the empty space. Scramble quickly, remove from pan when just barely set.

  6. 6

Add cold rice to the hot wok. Press and stir-fry aggressively for 3-4 minutes until each grain is separate and slightly toasted.

  7. 7

Add edamame, peas, soy sauce, white pepper. Toss everything together 2 minutes.

  8. 8

Return eggs to pan. Add sesame oil, toss 30 seconds.

  9. 9

Top with green onions. Serve immediately.
