200g Quinoa
200g Cherry tomatoes
1 large Cucumber
1 small Red onion
100g Kalamata olives
100g Feta cheese
3 tbsp Olive oil
2 tbsp Lemon juice
a handful Fresh parsley
to taste Salt

Instructions

Rinse the quinoa under cold water and then cook it according to package instructions, usually using a 2:1 water to quinoa ratio.

While the quinoa is cooking, chop the cherry tomatoes, cucumber, red onion, and parsley, and combine them in a large bowl.

Once the quinoa is cooked and cooled slightly, add it to the vegetable mixture, along with olives, feta cheese, olive oil, lemon juice, salt, and pepper. Toss everything together and serve.
