1 cup Quinoa
200g Cherry tomatoes
1, diced Cucumber
1/2, finely chopped Red onion
100g, pitted and sliced Kalamata olives
100g, crumbled Feta cheese
1/4 cup, chopped Fresh parsley
2 tbsp Olive oil
2 tbsp Lemon juice
to taste Salt
to taste Pepper

Instructions

Rinse the quinoa under cold water, then cook it according to package instructions. Set aside to cool.

In a large bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the vegetable mixture and toss gently.
