Directions

    Toast the dried guajillo and ancho chiles in a dry skillet over medium heat for about 2 minutes, turning often, until fragrant (don’t let them burn). Remove stems and seeds, then soak the chiles in hot water for 20 minutes until softened.

    In a large pot, combine the chicken thighs with the quartered onion, garlic cloves, and the chicken broth. Bring to a gentle simmer, cover, and cook for 20 minutes, or until chicken is cooked through and tender. Remove chicken and let cool slightly; reserve 1 cup of the cooking broth and discard the onion and garlic (or save for another use). Shred the chicken with two forks.

Drain the soaked chiles and place them in a blender with the tomatoes, the remaining 1/4 of a raw onion (from the quartered one, set aside), 2 garlic cloves (raw), the oregano, cumin, and 1/2 cup of the reserved broth. Blend until completely smooth.

Add the shredded chicken and cook, stirring occasionally, until it begins to brown and get a little crispy, about 5 minutes. Pour the blended salsa over the chicken, add the cinnamon stick, and season with salt. Reduce heat to low and simmer, uncovered, for 15 minutes, stirring occasionally, until the sauce thickens and coats the chicken beautifully.

    Heat a grill or a cast-iron skillet over high heat. Lightly char the corn tortillas (about 30 seconds per side). Grill the chicken tinga for an additional 2-3 minutes per side until you get nice grill marks—this is where the magic happens. Remove the cinnamon stick.
