Grilled Chicken Gyros With Tzatziki

Grilled Chicken Gyros with Tzatziki deliver the bright, sun-drenched flavors of Greece with minimal effort. Tender, charred chicken—marinated in lemon, garlic, and oregano—rests in warm pita pockets, while cool, creamy tzatziki, made from thick Greek yogurt and grated cucumber, adds a refreshing contrast. The dish balances smoky depth with bright acidity, all wrapped in a pillowy, toasted pita that soaks up every last drop of flavor. A weeknight dinner that tastes like a Mediterranean escape, it’s worth making for the way it effortlessly elevates even the simplest meal.

Directions

  1. 1

Grate the cucumber and squeeze out excess moisture. Combine with 2 tablespoons Greek yogurt, 1 clove minced garlic, 1 tablespoon lemon juice, and salt to taste to make tzatziki. Refrigerate.

  2. 2

Slice chicken breasts into thin strips. In a bowl, mix 2 tablespoons olive oil, 2 minced garlic cloves, 1 tablespoon oregano, juice of 1 lemon, 1 teaspoon red wine vinegar, and salt. Add chicken and marinate for 15 minutes.

  3. 3

Slice bell peppers and onions into strips. Toss with 1 tablespoon olive oil, salt, and 1/2 teaspoon white wine vinegar.

  4. 4

Grill or pan-sear chicken over medium-high heat for 4-5 minutes per side until cooked through. Let rest, then slice into bite-sized pieces.

  5. 5

Grill or sauté the vegetables until tender and slightly charred, about 5 minutes.

  6. 6

Warm pita bread on the grill or in a dry skillet for 30 seconds per side.

  7. 7

Assemble gyros: spread remaining Greek yogurt on pita, top with chicken, vegetables, sliced tomatoes, and tzatziki. Serve immediately.
