German Goulash

German goulash is a deeply satisfying stew of tender beef simmered in a rich, paprika-spiked sauce until fall-apart tender. The slow-cooked meat yields to a fork, while the sauce—thickened with flour and enriched with tomato and beef bouillon—delivers a balance of smoky, slightly sweet, and gently spiced flavors. A splash of red wine deepens the depth of the broth, making each spoonful layered and complex. This is the kind of dish that fills the kitchen with warmth and the table with comfort, effortlessly turning simple ingredients into a meal that feels like a hug in a bowl.

Directions

  1. 1

Cut the top round beef roast into 1-inch cubes and season with salt and pepper.

  2. 2

Heat oil in a large pot over medium-high heat and sear the beef cubes in batches until browned on all sides, about 5 minutes per batch. Remove and set aside.

  3. 3

Reduce heat to medium, add diced onion to the pot and cook until softened, about 5 minutes.

  4. 4

Stir in paprika and cook for 1 minute until fragrant.

  5. 5

Return the beef to the pot, add water, tomato sauce, and crumbled beef bouillon cubes. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours until the beef is tender.

  6. 6

In a small bowl, mix flour with 2 tablespoons of cold water to form a slurry. Stir into the goulash and cook for an additional 5 minutes until thickened.

  7. 7

Season with ground pepper to taste and serve hot with egg noodles or bread.
