Directions
- 1
Cook the shrimp in boiling water for 2-3 minutes until pink, then transfer to ice water and peel, slice in half lengthwise.
- 2
Prepare the dipping sauce: in a small bowl, combine fish sauce, lime juice, rice vinegar, sugar, water, minced garlic, and finely chopped chili pepper; stir until sugar dissolves.
- 3
Wash and dry the lettuce, mint, coriander, and basil. Remove the core from the lettuce and tear leaves into large pieces. Thinly slice the bell pepper into strips.
- 4
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for 5-10 seconds until pliable, then lay flat on a clean work surface.
- 5
On the lower third of the wrapper, place a lettuce leaf, a few mint leaves, coriander, basil, and a few bell pepper strips.
- 6
Add 2 shrimp halves, cut side up, on top of the herbs.
- 7
Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly into a cylinder. Repeat with remaining wrappers and filling.
- 8
Serve the spring rolls immediately with the prepared nuoc cham dipping sauce.
