Creamy Vegan Tuscan White Bean Soup

This velvety Tuscan white bean soup is a plant-based masterpiece, blending creamy coconut milk with tender cannellini beans and wilted spinach in a rich, herbaceous broth. Brightened by garlic, tomatoes, and a hint of red pepper flakes, it balances earthy depth with a subtle warmth, while fresh basil adds a fragrant finish. Perfect for chilly evenings, it’s a satisfying bowl of comfort that’s as nourishing as it is flavorful—no dairy required.
