Pat the chicken legs dry and season generously with salt and pepper. In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat and brown the chicken in batches, skin-side down first, until deep golden (about 5 minutes per side). Transfer to a plate and set aside.

Reduce heat to medium, add the lardons, and cook until they render their fat and become crispy, about 5 minutes. Remove with a slotted spoon and set aside with the chicken.

Add the pearl onions to the pot and sauté until lightly browned, about 4 minutes. Stir in the mushrooms and garlic, cooking for another 3 minutes until the mushrooms begin to soften. Sprinkle the flour over the vegetables and cook, stirring, for 1 minute to make a light roux.
