Pat the chicken pieces dry and season generously with salt and pepper. In a large Dutch oven, heat 1 tablespoon of olive oil over medium-high heat and sear the chicken in batches until golden brown on all sides. Transfer to a plate and set aside.

Reduce heat to medium, add the lardons and pearl onions to the pot. Cook, stirring occasionally, until the lardons render their fat and onions are lightly caramelized, about 5 minutes. Remove with a slotted spoon and set aside with the chicken.
