    Season beef cubes generously with salt and pepper, then dredge in flour. In a large Dutch oven, heat 2 tbsp olive oil over medium-high heat. Brown beef in batches until deeply caramelized on all sides, about 8 minutes total. Remove and set aside. Reduce heat to medium, add butter and remaining oil, then sauté shallots, carrots, and mushrooms for 5 minutes until softened. Add garlic and tomato paste, cook 1 minute more.

    Deglaze the pot with the entire bottle of red wine, scraping up the browned bits. Return the beef to the pot, add beef stock, thyme, and bay leaves. Bring to a gentle simmer, then cover and cook on low heat for 1 hour and 30 minutes, or until beef is fork-tender. Stir occasionally. Meanwhile, preheat your oven to 375°F (190°C).
