Directions

    Place chicken breasts in a pot with salted water, cover, and simmer for 15 minutes until cooked through. Remove chicken, let cool, then shred into bite-sized pieces.

    In a blender, combine roasted tomatoes, chipotle peppers, garlic, oregano, cumin, and a pinch of salt. Blend until smooth sauce.
