Directions

    Start by making the teriyaki sauce: in a small bowl, whisk together soy sauce, mirin, sake, sugar, and grated ginger until the sugar dissolves. Set aside.

    Pat the chicken thighs dry with paper towels. Heat vegetable oil in a large non-stick skillet over medium-high heat. Place the chicken skin-side down and cook for 5-6 minutes until golden and crispy. Flip and cook the other side for 4-5 minutes until fully cooked through. Pour the teriyaki sauce into the pan and let it simmer for 2-3 minutes, turning the chicken to coat evenly, until the sauce thickens into a glossy glaze. Remove from heat and let rest for 2 minutes, then slice into thick strips.

    While the chicken rests, prepare the miso soup. In a medium saucepan, bring the dashi stock to a gentle simmer over medium heat. Taste and adjust with a little extra miso if needed. Garnish with sliced green onions.
