
Brazilian Black Bean Stew with Pork and Beef (Feijoada)

- pork shoulder500g
- beef chuck500g
- smoked sausage (linguiça or kielbasa)300g
- bacon200g
- onion2 medium
- garlic6 cloves
- bay leaves3
- orange1

- farofa (toasted cassava flour)for serving
- white ricefor serving
- collard greensfor serving

Soak the black beans in plenty of water overnight. Drain and set aside.

In a large pot, cook the bacon until crisp. Add the pork, beef, and sausage, browning on all sides. Remove excess fat if needed.

Add the onion and garlic, sauté until fragrant. Then add the beans, bay leaves, and enough water to cover by 2 inches. Bring to a boil, then reduce heat and simmer, covered, for about 1.5 hours, until beans and meats are tender.

Stir in the juice of half an orange and season with salt and pepper. Simmer uncovered for another 15 minutes to thicken slightly.

Remove bay leaves. Serve the feijoada hot with white rice, sautéed collard greens, farofa, and orange slices.
