    Pat the beef cubes dry with paper towels and season generously with salt and black pepper. In a large Dutch oven over medium-high heat, warm 2 tbsp of olive oil and sear the beef in batches until deeply browned on all sides, about 5 minutes per batch. Transfer to a plate and set aside.

    Reduce heat to medium. Add the bacon lardons and cook until crisp and the fat is rendered, about 6 minutes. Remove with a slotted spoon and add to the beef. In the same pot, add the carrots and pearl onions, sautéing for 8 minutes until lightly caramelized. Stir in the garlic and tomato paste, cooking for 1 minute until fragrant.

    Sprinkle the flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste. Slowly pour in the red wine, scraping up any browned bits from the bottom.
