Directions

    Make the crust: In a food processor, pulse flour and cold butter until coarse crumbs form. Add egg yolk and 2-3 tbsp ice water; pulse until dough comes together. Press into a 9-inch tart pan, prick with a fork, and chill for 30 minutes.

    Preheat oven to 180°C. Line the crust with parchment and fill with pie weights; bake for 15 minutes. Remove weights and bake 5 more minutes until lightly golden. Set aside.

    For the filling: In a large Dutch oven, brown the beef cubes in batches over medium-high heat with 1 tbsp olive oil. Set aside. In the same pot, sauté lardons until crisp; remove. Add pearl onions and mushrooms; cook until browned, then remove.

    Add remaining olive oil, carrot, and garlic; cook for 2 minutes. Stir in tomato paste and cook for 1 minute. Deglaze with red wine, scraping up browned bits. Add beef, stock, bay leaf, and thyme. Bring to a simmer, cover, and cook over low heat for 1.5 hours or until beef is tender.
