
Boeuf Bourguignon with a Red Wine Reduction

The beef, slowly braised in full-bodied red wine, becomes meltingly tender, while pearl onions and mushrooms soak up all the savory goodness. - beef chuck1.2kg, cut into cubes
- red wine (Burgundy or Pinot Noir)750ml
- beef stock500ml
- bacon lardons150g
- pearl onions200g, peeled
- button mushrooms250g, halved
- carrots3 large, sliced
- garlic4 cloves, minced
- tomato paste2 tbsp
- all-purpose flour2 tbsp
- bay leaves2
- fresh thyme4 sprigs
- olive oil2 tbsp
- salt and pepperto taste

Pat the beef dry and season generously with salt and pepper. In a large Dutch oven, heat 1 tbsp olive oil over medium-high heat. Brown the beef in batches, ensuring all sides get a deep crust. Set aside.

Reduce heat to medium. Add the lardons and cook until crispy, about 5 minutes. Remove and set aside, leaving the fat in the pot.

Add the pearl onions and carrots; sauté until they begin to soften, about 5 minutes. Stir in the garlic and tomato paste; cook for 1 minute until fragrant.

Sprinkle the flour over the vegetables, stirring constantly for 2 minutes. Pour in the red wine, scraping up any browned bits from the bottom. Bring to a boil, then reduce heat to a simmer.

Return the beef and lardons to the pot. Add the beef stock, bay leaves, and thyme. Cover and simmer gently for 2 hours, stirring occasionally.

After 2 hours, add the mushrooms and continue simmering, uncovered, for another 30 minutes, until the sauce has thickened and the beef is fork-tender. Discard the bay leaves and thyme sprigs before serving.
