Preheat the oven to 160°C (320°F). Pat the beef cubes dry with paper towels and season generously with salt and pepper.

In a large Dutch oven or heavy pot, heat 1 tablespoon of olive oil over medium-high heat. Add the bacon lardons and cook until crisp, about 5 minutes. Remove with a slotted spoon and set aside, leaving the fat in the pot.

In the same pot, working in batches to avoid crowding, sear the beef cubes on all sides until deeply browned (about 5 minutes per batch). Transfer the beef to a plate and set aside.
