Bavarian Beer-Braised Pork Shanks with Pretzel Dumplings

Imagine a chilly evening in a Munich beer hall, where the air is thick with the scent of malt and roasting meats. This dish brings that coziness straight to your kitchen. You start with a hearty pork shank, slowly braised in a dark wheat beer until it’s tender enough to fall off the bone, its skin crackling into golden perfection. The braising liquid, enriched with caraway and a touch of honey, becomes a glossy, savory sauce that clings to every bite. Alongside are pillowy pretzel dumplings, a clever twist on tradition—soft, chewy, and studded with salty pretzel pieces, they soak up the rich gravy like little sponges. It’s rustic, honest, and deeply satisfying—the kind of meal that makes you slow down, pour a cold brew, and savor every moment. You don’t need a beer hall to feel this warmth. Just your stove, a bit of patience, and a hunger for German comfort.

Directions

  1. 1

Season the pork shanks generously with salt and pepper. In a heavy Dutch oven, heat 2 tablespoons of oil over medium-high heat. Sear the shanks on all sides until deep golden brown, about 8 minutes total. Remove and set aside.

  2. 2

Reduce heat to medium. Add remaining oil, then sauté onions, carrots, and celery for 5 minutes until softened. Stir in garlic, caraway seeds, and bay leaves; cook 1 minute. Pour in the dark beer, scraping up browned bits. Stir in honey and bring to a simmer.

  3. 3

Return the shanks to the pot, submerging them partially. Cover and transfer to a preheated oven at 160°C (320°F). Braise for 2 to 2.5 hours, until the meat is fork-tender. While braising, make the dumplings: in a bowl, soak the cubed pretzel rolls in milk for 10 minutes. Mix in eggs, melted butter, and parsley; season with salt. Shape into 8 balls.

  4. 4

Bring a large pot of salted water to a gentle boil. Drop in the dumplings, reduce heat to low, and simmer for 15 minutes, turning once. They should be puffed and cooked through. Drain and keep warm.

  5. 5

When the shanks are done, remove them from the pot and keep warm. Strain the cooking liquid, discarding solids, and return to the stove over medium heat. Mix cornstarch with water to form a slurry, stir into the liquid, and simmer until thickened into a gravy. Season to taste.

  6. 6

Serve each pork shank on a plate with two pretzel dumplings alongside. Spoon the beer gravy generously over both. Garnish with extra parsley if desired. Enjoy with a cold wheat beer and a hearty appetite.
