5-Ingredient Black Bean Tacos That Are Better Than Any I've Paid For

I'm not exaggerating when I say these tacos made my meat-loving friends question everything. Crispy pan-fried black beans with smoky cumin and lime, piled into warm tortillas — ready in 15 minutes and costs almost nothing. I've made these for dinner parties and no one asked for meat. This is the recipe I send to every person who says they can't eat well on a budget.

Directions

  1. 1

Drain and rinse black beans well. Pat them dry with paper towels — this helps them crisp up.

  2. 2

Heat oil in skillet over medium-high. Add beans in a single layer.

  3. 3

Season with cumin, smoked paprika, garlic powder, and salt. Do not stir for 2 minutes — let them get crispy.

  4. 4

Stir and cook 3 more minutes until beans are slightly crispy on the outside.

  5. 5

Squeeze lime juice over beans. Stir and remove from heat.

  6. 6

Warm tortillas directly over a gas flame or in a dry pan.

  7. 7

Build tacos: beans, sliced avocado, cilantro, extra lime squeeze. That's it.
